Welcome to Sticks’n’Sushi - where Japan meets Denmark in the most deliciously, unexpected way.

Not a chain, but a family of restaurants, founded in Copenhagen 31 years ago, by two Japanese-Danish brothers and their brother-in-law. With a unique blend of cultures and culinary traditions, they created something entirely new - and entirely unforgettable.

We serve a unique combination of classic and creative sushi alongside sticks from the grill. After all, we’re a sushi restaurant – even for those who don’t like fish.

We are known for exceptional food, thoughtful Danish design, and a total commitment to developing talented people.

Today, we are growing with restaurants in Copenhagen, Berlin, London, Oxford, Cambridge and soon to be opening a restaurant and bar in George Square, Glasgow!

What you’ll be doing at Sticks ‘n’ Sushi

You’ll work in the kitchen with energy and pride, delivering exceptional food that fuels outstanding guest experiences. With a focus on quality, consistency, and teamwork, you’ll help bring our culinary vision to life.

You’ll support your colleagues with skill and spirit, contributing to a kitchen culture built on learning, pride, and mutual respect. Guests come to us to “leave the real world behind for a while” - and your work on the sushi section helps make that possible.

You’ll be trusted with looking after your section, working as a team and driving excellence in both prep and service. You’ll be reporting to the Head Chef and ensure everything from food safety to flavour is absolutely spot on.

You’ll be our kitchen ambassador in Glasgow, Scotland.


What you’ll bring to us

As a seasoned Sushi Chef, you’ll have a track record of confidence and hospitality excellence under your belt in previous roles.

Yet you’ve got the adaptability of water, able to stay calm, flexible and quickly respond to challenges and change. You will always keep our standards high and focusing on the guests experience.

Alongside this, you bring respect, trust and generosity to your team, hearing their ideas and coaching them in their work.

You’ll be the fiery spark that ignites the creativity of your team to make this new restaurant something special in its own right. You will thrive on learning Japanese & Danish culture, ingredients and service style.

You’ll embrace our “big smile, small ego” and “Ja Tak” attitude.

You’ll be happy to undertake extensive training in our London restaurants.
